Ingredients
- •113 g Cottage cheese(½ cup)
- •60 g Liquid egg whites(¼ cup)
- •25 g Lite mozzarella(for crust)
- •0.5 tsp Psyllium husk powder
- •1 tsp Oat fiber
- •1 pinch Salt
- •1 pinch Italian seasoning
- •55 g Tomato sauce(3 tbsp)
- •25 g Part-skim mozzarella(for topping)
- •14 g Pepperoni(7 slices)
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Blend cottage cheese and egg whites until smooth.
- 3Stir in lite mozzarella, psyllium husk powder, oat fiber, salt, and Italian seasoning.
- 4Spread the mixture into a 6-7" round on parchment paper.
- 5Bake for 15-18 minutes until golden and firm.
- 6Top with tomato sauce, part-skim mozzarella, and pepperoni.
- 7Bake for an additional 6-8 minutes.
- 8Optional: Broil for 1-2 minutes for a crispier top.
