Crispy-Chewy Personal Pizza (Best of Both)
Ingredients
  • 113 g Cottage cheese(½ cup)
  • 60 g Liquid egg whites(¼ cup)
  • 25 g Lite mozzarella(for crust)
  • 0.5 tsp Psyllium husk powder
  • 1 tsp Oat fiber
  • 1 pinch Salt
  • 1 pinch Italian seasoning
  • 55 g Tomato sauce(3 tbsp)
  • 25 g Part-skim mozzarella(for topping)
  • 14 g Pepperoni(7 slices)
Instructions
  1. 1Preheat oven to 400°F (200°C).
  2. 2Blend cottage cheese and egg whites until smooth.
  3. 3Stir in lite mozzarella, psyllium husk powder, oat fiber, salt, and Italian seasoning.
  4. 4Spread the mixture into a 6-7" round on parchment paper.
  5. 5Bake for 15-18 minutes until golden and firm.
  6. 6Top with tomato sauce, part-skim mozzarella, and pepperoni.
  7. 7Bake for an additional 6-8 minutes.
  8. 8Optional: Broil for 1-2 minutes for a crispier top.
Chef's Notes
  • The psyllium husk powder and oat fiber help bind the crust and add fiber.
  • Make sure to blend the cottage cheese and egg whites until completely smooth for the best texture.
  • The crust should be firm and golden before adding toppings.
