Healthy California Roll
Ingredients
  • 2 sheets Nori sheets(dried seaweed)
  • 0.5 cup Rolled oats(cooked and cooled)
  • 1 stick Imitation crab stick(1 oz, cut in half lengthwise)
  • 2 large Eggs(scrambled)
  • 0.5 medium Avocado(sliced)
  • 0.25 tsp Salt(to taste)
  • 0.25 tsp Black pepper(to taste)
Instructions
  1. 1Cook rolled oats according to package instructions (usually 1:2 ratio oats to water)
  2. 2Let the oats cool to room temperature
  3. 3Scramble the eggs in a non-stick pan until fluffy, set aside
  4. 4Slice the avocado into thin strips
  5. 5Cut the imitation crab stick in half lengthwise
  6. 6Place a nori sheet on a bamboo rolling mat, shiny side down
  7. 7Spread about 1/4 cup of cooked oats evenly over the nori, leaving 1 inch at the top
  8. 8Arrange imitation crab, scrambled eggs, and avocado slices horizontally across the center of the oats
  9. 9Season with salt and pepper
  10. 10Moisten the top edge of the nori with water
  11. 11Roll the nori tightly from bottom to top using the bamboo mat
  12. 12Press gently to seal the roll
  13. 13Repeat with the second nori sheet
  14. 14Cut each roll into 6-8 pieces with a sharp, wet knife
  15. 15Serve immediately for best texture

  • Use a sharp knife and wet it between cuts to get clean slices
  • Don't overfill the rolls - less is more for easy rolling
  • Keep your hands wet when handling the oats to prevent sticking
  • The oats should be at room temperature, not hot, when rolling
